Ingredients

Vegetable oil
enough for frying
Green onions
2, finely chopped
Milk
1/2 cup
Egg
1, beaten
Black pepper
1/4 teaspoon
Salt
1/2 teaspoon
Baking powder
1 teaspoon
Cornmeal
1/2 cup
All-purpose flour
1/2 cup
Sweet corn kernels
1 cup, fresh or frozen (if frozen, thaw and drain well)

Instructions

  1. In a large bowl, whisk together the all-purpose flour, cornmeal, baking powder, salt, and black pepper.
  2. In a separate bowl, combine the beaten egg and milk. Beat until well mixed.
  3. Gradually add the egg mixture to the dry ingredients, stirring until a thick batter forms.
  4. Fold in the sweet corn kernels and chopped green onions, ensuring they are evenly distributed in the batter.
  5. Heat vegetable oil in a deep frying pan over medium heat. The oil is ready when a small amount of batter dropped in sizzles and floats.
  6. Carefully drop spoonfuls of the batter into the hot oil, and flatten slightly with the back of the spoon. Avoid overcrowding the pan.
