Instructions
- In a large bowl, whisk together the all-purpose flour, cornmeal, baking powder, salt, and black pepper.
- In a separate bowl, combine the beaten egg and milk. Beat until well mixed.
- Gradually add the egg mixture to the dry ingredients, stirring until a thick batter forms.
- Fold in the sweet corn kernels and chopped green onions, ensuring they are evenly distributed in the batter.
- Heat vegetable oil in a deep frying pan over medium heat. The oil is ready when a small amount of batter dropped in sizzles and floats.
- Carefully drop spoonfuls of the batter into the hot oil, and flatten slightly with the back of the spoon. Avoid overcrowding the pan.
- Cook the fritters for 2-3 minutes on each side, or until they turn a beautiful golden brown color.
- Using a slotted spoon, remove the fritters from the oil and drain on a paper towel-lined plate.
- Serve the sweet corn fritters hot, either on their own or with your favorite dipping sauce. A dollop of sour cream or a drizzle of honey pairs very well.
