Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Sauté for about 5 minutes, until the onion becomes translucent and fragrant.
- Stir in the sweet corn kernels and cook for an additional 5 minutes, allowing the corn to soften slightly.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes to combine the flavors.
- Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, be careful to blend in batches and allow steam to escape.
- Return the pureed soup to the pot and stir in the milk, salt, and black pepper. Heat over low for another 5 minutes, stirring occasionally.
- Serve hot, garnished with fresh cilantro for a burst of color and flavor.
Tips
- For a spicier kick, add a pinch of cayenne pepper or diced jalapeños during the sautéing stage.
- You can substitute coconut milk for a dairy-free version while still keeping the creaminess.
- For added texture, reserve a small amount of corn kernels before pureeing and stir them back into the soup prior to serving.
