Whole milk
1 cup
Vegetable broth
4 cups
Garlic
3 cloves, minced
Onion
1 medium, chopped
Sweet corn kernels
4 cups (fresh or frozen)

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic. Sauté for about 5 minutes, until the onion becomes translucent and fragrant.
  3. Stir in the sweet corn kernels and cook for an additional 5 minutes, allowing the corn to soften slightly.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes to combine the flavors.
  5. Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, be careful to blend in batches and allow steam to escape.
  6. Return the pureed soup to the pot and stir in the milk, salt, and black pepper. Heat over low for another 5 minutes, stirring occasionally.
