Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Sauté for about 5 minutes, until the onion becomes translucent and fragrant.
- Stir in the sweet corn kernels and cook for an additional 5 minutes, allowing the corn to soften slightly.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes to combine the flavors.
- Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, be careful to blend in batches and allow steam to escape.
