Ingredients
- Sweet potatoes
- 2 medium, peeled and cubed
- Black beans
- 1 can (15 oz), drained and rinsed
- Breadcrumbs
- 1/2 cup
- Egg
- 1, beaten
- Garlic
- 2 cloves, minced
- Cumin
- 1 teaspoon
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Olive oil
- 2 tablespoons (for cooking)
- Burger buns
- 4
- Lettuce
- 4 leaves, for topping
- Tomato
- 1 large, sliced
- Onion
- 1 small, sliced
- Avocado
- 1, sliced (optional for topping)
- Sriracha or your favorite sauce
- to taste (optional)
Instructions
- In a pot, boil the sweet potatoes until tender, about 15-20 minutes. Drain and let cool slightly.
- In a large bowl, mash the cooked sweet potatoes and black beans together until mostly smooth, leaving some texture for a hearty bite.
- Add the breadcrumbs, beaten egg, minced garlic, cumin, salt, and black pepper to the bowl. Mix until all ingredients are well combined.
- Form the mixture into 4 equal-sized patties, making sure to press them together firmly.
- Heat the olive oil in a large skillet over medium heat. Once hot, carefully add the patties to the skillet.
- Cook the patties for 5-7 minutes on each side, or until they are golden brown and heated through.
- Toast the burger buns lightly in the skillet if desired.
- Assemble the burgers by placing each patty on a bun and topping with lettuce, tomato, onion, avocado, and a drizzle of Sriracha or your favorite sauce.
