
Sweet Potato Chowder
This creamy and comforting sweet potato chowder is packed with flavor and perfect for chilly days.
Ingredients
- Green onions (2 tablespoons, chopped)
- Cheddar cheese (1 cup, shredded)
- Salt and pepper (to taste)
- Thyme (1 teaspoon)
- Butter (2 tablespoons)
- All (purpose flour - 2 tablespoons)
- Milk (1 cup)
- Vegetable broth (4 cups)
- Carrots (2 medium, chopped)
- Celery (2 stalks, chopped)
- Garlic (3 cloves, minced)
- Onion (1 medium, chopped)
- Sweet potatoes (3 large, peeled and diced)
Instructions
- In a large pot, melt the butter over medium heat.
- Add the onion, garlic, celery, and carrots. Cook until the vegetables are tender, about 5 minutes.
- Stir in the flour and cook for 1 minute.
- Gradually whisk in the vegetable broth until smooth.
- Add the sweet potatoes and thyme. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the sweet potatoes are tender.
- Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
- Return the soup to the pot and stir in the milk.
- Simmer for an additional 5 minutes.
- Serve the chowder hot, topped with shredded cheddar cheese and chopped green onions.
