Sweet Potato Chowder

This creamy and comforting sweet potato chowder is packed with flavor and perfect for chilly days.

Ingredients

  • Green onions (2 tablespoons, chopped)
  • Cheddar cheese (1 cup, shredded)
  • Salt and pepper (to taste)
  • Thyme (1 teaspoon)
  • Butter (2 tablespoons)
  • All (purpose flour - 2 tablespoons)
  • Milk (1 cup)
  • Vegetable broth (4 cups)
  • Carrots (2 medium, chopped)
  • Celery (2 stalks, chopped)
  • Garlic (3 cloves, minced)
  • Onion (1 medium, chopped)
  • Sweet potatoes (3 large, peeled and diced)

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion, garlic, celery, and carrots. Cook until the vegetables are tender, about 5 minutes.
  3. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the vegetable broth until smooth.
  5. Add the sweet potatoes and thyme. Season with salt and pepper.
  6. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the sweet potatoes are tender.
  7. Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
  8. Return the soup to the pot and stir in the milk.
  9. Simmer for an additional 5 minutes.
  10. Serve the chowder hot, topped with shredded cheddar cheese and chopped green onions.
