Sweet potatoes
2 large, peeled and diced
Red bell pepper
1, diced
Onion
1 medium, diced
Garlic
2 cloves, minced
Paprika
1 teaspoon
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste
Fresh parsley
1/4 cup, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced sweet potatoes to the skillet and sauté for about 10 minutes, stirring occasionally, until they begin to soften.
  3. Stir in the diced onion, red bell pepper, and minced garlic. Season with salt, black pepper, and paprika.
  4. Continue to cook, stirring occasionally, for an additional 15-20 minutes, or until the vegetables are tender and the sweet potatoes are golden brown.
  5. Once cooked, remove from heat and sprinkle with freshly chopped parsley before serving.
