
Sweet Potato Tacos
These delicious sweet potato tacos are filled with roasted sweet potatoes, black beans, and flavorful spices.
Ingredients
- Lime (1, cut into wedges)
- Cilantro (1/4 cup, chopped)
- Avocado (1, sliced)
- Tortillas (8 small, corn or flour)
- Black beans (1 can, drained and rinsed)
- Salt (1/2 teaspoon)
- Chili powder (1 teaspoon)
- Cumin (1 teaspoon)
- Olive oil (2 tablespoons)
- Sweet potatoes (2 large, peeled and cubed)
Instructions
- Preheat the oven to 400°F.
- In a large bowl, toss the sweet potatoes with olive oil, cumin, chili powder, and salt until well coated.
- Spread the sweet potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and slightly crispy.
- In a small saucepan, heat the black beans over medium heat until warmed through.
- Warm the tortillas in a dry skillet or microwave.
- To assemble the tacos, spread a spoonful of black beans on each tortilla.
- Top with roasted sweet potatoes, sliced avocado, and chopped cilantro.
- Squeeze fresh lime juice over the tacos.
