  • Lime (1, juiced)
  • Cilantro (1/2 cup, chopped)
  • Avocado (1, sliced)
  • Tortillas (8)
  • Black beans (1 can (15 oz), rinsed and drained)
  • Salt (1/2 teaspoon)
  • Chili powder (1 teaspoon)
  • Cumin (1 teaspoon)
  • Olive oil (2 tablespoons)
  • Sweet potatoes (2 large, peeled and diced into 1/2 inch cubes)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced sweet potatoes, olive oil, cumin, chili powder, and salt. Toss until the sweet potatoes are well coated.
