Lime
1, juiced
Cilantro
1/2 cup, chopped
Avocado
1, sliced
Tortillas

1 can (15 oz), rinsed and drained
Salt
1/2 teaspoon
Chili powder
1 teaspoon
Cumin
1 teaspoon
Olive oil
2 tablespoons
Sweet potatoes
2 large, peeled and diced into 1/2 inch cubes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced sweet potatoes, olive oil, cumin, chili powder, and salt. Toss until the sweet potatoes are well coated.
  3. Spread the sweet potatoes out in a single layer on a baking sheet. Roast for 25-30 minutes, or until the sweet potatoes are tender and slightly crispy.
  4. While the sweet potatoes are roasting, heat the black beans in a small saucepan over medium heat until warmed through. Keep them warm until ready to serve.
  5. Warm the tortillas in a dry skillet over medium heat or in the microwave for about 15 seconds.
  6. To assemble the tacos, spread a spoonful of warm black beans onto each tortilla.
  7. Top the black beans with a generous portion of roasted sweet potatoes, a few slices of avocado, and a sprinkle of chopped cilantro.
  8. Finish each taco with a squeeze of fresh lime juice.
