Ingredients

Original recipe serves 6

Salt
1/2 teaspoon
Granulated Sugar
1 cup, or to taste
Water
8 cups
Red Beans (Adzuki Beans)
1 cup, rinsed and drained

Instructions

  1. Begin by rinsing the red beans under cold running water until the water runs clear.
  2. Place the rinsed beans into a large pot and add the 8 cups of water.
  3. Bring the water and beans to a rolling boil over high heat.
  4. Once boiling, reduce the heat to low, cover the pot and allow it to simmer for approximately 2 hours. During this time, the beans will soften, and the soup will begin to thicken.
  5. After 2 hours, uncover the pot and add the granulated sugar and salt. Stir well until all the sugar and salt are fully dissolved into the soup.
  6. Let the soup continue to cook uncovered for an additional 10 minutes.
  7. Your Sweet Red Bean Soup is ready to be served. It can be enjoyed either warm or chilled, based on your preference.

  • 💡 For a creamier texture, you can puree half of the beans and mix them back into the soup.
  • 💡 Feel free to adjust the sugar level according to your personal preference. Brown sugar can also be used for a deeper flavor.
