Ingredients
- Chicken breasts (2, boneless and skinless)
- Salt (to taste)
- Black pepper (to taste)
- Olive oil (2 tablespoons)
- Garlic (3 cloves, minced)
- Swiss chard (4 cups, chopped)
- Balsamic vinegar (3 tablespoons)
Instructions
- Season the chicken breasts generously with salt and black pepper on both sides.
- In a large skillet, heat the olive oil over medium heat until shimmering.
- Add the seasoned chicken breasts to the skillet and cook for 6-8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove the chicken from the skillet and set it aside on a plate, covering it with foil to keep warm.
- In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.
- Add the chopped Swiss chard to the skillet and cook for about 5 minutes, stirring frequently, until the leaves are wilted and tender.
- Drizzle the balsamic vinegar over the Swiss chard and stir well to combine all the flavors. Allow it to cook for another minute or two, letting the vinegar reduce slightly.
- Return the chicken breasts to the skillet, nestling them among the Swiss chard, and cook for an additional 2 minutes to reheat the chicken and absorb the flavors.
- Serve the Swiss chard and balsamic chicken together on a plate, drizzling any remaining balsamic sauce from the skillet over the top.
