
Swiss Chard and Fennel Soup
This hearty and nutritious soup combines the flavors of Swiss chard and fennel for a delicious and comforting meal.
Ingredients
- Lemon juice (1 tablespoon)
- Salt and pepper (to taste)
- Dried thyme (1 teaspoon)
- Cannellini beans (1 can (15 oz), drained and rinsed)
- Vegetable broth (4 cups)
- Swiss chard (1 bunch, stems removed and leaves chopped)
- Garlic (3 cloves, minced)
- Fennel bulb (1 large, thinly sliced)
- Onion (1 medium, chopped)
- Olive oil (2 tablespoons)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, fennel, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the Swiss chard and cook until wilted, about 3 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes.
- Add the cannellini beans and dried thyme. Season with salt and pepper to taste.
- Simmer for another 10 minutes to allow the flavors to meld together.
- Stir in the lemon juice just before serving.
- Serve hot and enjoy!
