Ingredients
- Chicken breasts (4, boneless and skinless)
- Swiss chard (2 cups, chopped)
- Fontina cheese (1 cup, shredded)
- Garlic (3 cloves, minced)
- Olive oil (2 tablespoons)
- Salt (to taste)
- Black pepper (to taste)
- Toothpicks (as needed for securing)
Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the chicken breasts by cutting a slit horizontally through the center, being careful not to cut all the way through.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the chopped Swiss chard to the skillet and stir until wilted, about 5 minutes. Season with salt and pepper to taste.
- Remove the skillet from heat and let the Swiss chard mixture cool slightly.
- Place a generous spoonful of the Swiss chard mixture onto one side of each butterflied chicken breast.
- Sprinkle the shredded Fontina cheese over the Swiss chard mixture.
- Fold the other side of the chicken breast over the filling, securing it with toothpicks if needed.
- Season the stuffed chicken breasts with salt and pepper on both sides.
- Heat a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for 2-3 minutes on each side until browned.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
