Ingredients

  • Olive oil (2 tablespoons)
  • Onion (1, chopped)
  • Garlic (3 cloves, minced)
  • Carrots (2, diced)
  • Celery (2 stalks, diced)
  • Swiss chard (4 cups, chopped)
  • Lentils (1 cup, rinsed)
  • Vegetable broth (4 cups)
  • Cumin (1 teaspoon)
  • Paprika (1 teaspoon)
  • Salt (to taste)
  • Pepper (to taste)
  • Lemon juice (2 tablespoons)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
  3. Stir in the diced carrots and celery, cooking for an additional 5 minutes until they begin to soften.
  4. Add the chopped Swiss chard, rinsed lentils, vegetable broth, cumin, paprika, salt, and pepper. Increase the heat to bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and let the stew simmer for approximately 30 minutes, or until the lentils are tender.
  6. Stir in the lemon juice for a bright finish and adjust seasoning to taste.
