
Swiss Chard and Lentil Stew
This hearty and nutritious stew is made with Swiss chard, lentils, and flavorful spices.
Ingredients
- Lemon juice (1 tablespoon)
- Salt and pepper (to taste)
- Paprika (1 teaspoon)
- Cumin (1 teaspoon)
- Vegetable broth (4 cups)
- Lentils (1 cup, rinsed)
- Swiss chard (1 bunch, stems removed and leaves chopped)
- Celery (2 stalks, diced)
- Carrots (2 medium, diced)
- Garlic (3 cloves, minced)
- Onion (1 medium, chopped)
- Olive oil (2 tablespoons)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the carrots, celery, Swiss chard, lentils, vegetable broth, cumin, paprika, salt, and pepper. Bring to a boil.
- Reduce the heat and simmer for 30 minutes, or until the lentils are tender.
- Stir in the lemon juice and adjust the seasoning if needed.
- Serve hot and enjoy!
