Hearty Swiss Chard and Sausage Stew

Ingredients

Italian sausage
1 pound, casings removed
Onion
1 medium, chopped
Garlic
4 cloves, minced
Swiss chard
1 bunch, stems removed and leaves chopped
Cannellini beans
2 cans (15 oz each), drained and rinsed
Diced tomatoes
1 can (14.5 oz)
Chicken broth
4 cups
Italian seasoning
1 tablespoon
Salt
to taste
Pepper
to taste
Parmesan cheese
1/2 cup, grated (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into small pieces with a wooden spoon.
  2. Once the sausage is browned, add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent and fragrant, about 5 minutes.
  3. Add the chopped Swiss chard leaves to the pot, stirring until they wilt down, about 3-4 minutes.
  4. Stir in the cannellini beans, diced tomatoes (with juice), chicken broth, Italian seasoning, salt, and pepper. Mix well to combine.
  5. Bring the stew to a rolling boil, then reduce the heat to low. Cover and let simmer for about 30 minutes to allow the flavors to meld together, stirring occasionally.
