Swiss Chard and Sausage Stew

This hearty stew combines Swiss chard, sausage, and flavorful spices for a comforting and delicious meal.

Ingredients

  • Parmesan cheese (grated, for serving)
  • Salt and pepper (to taste)
  • Italian seasoning (1 teaspoon)
  • Chicken broth (4 cups)
  • Diced tomatoes (1 can (14.5 oz))
  • Cannellini beans (1 can (15 oz), drained and rinsed)
  • Swiss chard (1 bunch, stems removed and leaves chopped)
  • Garlic (3 cloves, minced)
  • Onion (1 large, chopped)
  • Italian sausage (1 pound, casings removed)

Instructions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned, breaking it up into small pieces.
  2. Add the chopped onion and minced garlic to the pot and cook until the onion is translucent.
  3. Add the Swiss chard leaves to the pot and cook until wilted.
  4. Stir in the cannellini beans, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  5. Bring the stew to a boil, then reduce the heat and simmer for 30 minutes to allow the flavors to meld together.
  6. Serve the stew hot, garnished with grated Parmesan cheese.
