
Swiss Chard and Sausage Stew
This hearty stew combines Swiss chard, sausage, and flavorful spices for a comforting and delicious meal.
Ingredients
- Parmesan cheese (grated, for serving)
- Salt and pepper (to taste)
- Italian seasoning (1 teaspoon)
- Chicken broth (4 cups)
- Diced tomatoes (1 can (14.5 oz))
- Cannellini beans (1 can (15 oz), drained and rinsed)
- Swiss chard (1 bunch, stems removed and leaves chopped)
- Garlic (3 cloves, minced)
- Onion (1 large, chopped)
- Italian sausage (1 pound, casings removed)
Instructions
- In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned, breaking it up into small pieces.
- Add the chopped onion and minced garlic to the pot and cook until the onion is translucent.
- Add the Swiss chard leaves to the pot and cook until wilted.
- Stir in the cannellini beans, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Bring the stew to a boil, then reduce the heat and simmer for 30 minutes to allow the flavors to meld together.
- Serve the stew hot, garnished with grated Parmesan cheese.
