Grilled to perfection, they offer a nutritious, flavor-packed meal that'll transport your taste buds to sun-drenched beaches with every bite.

Ingredients

Swordfish steaks
1.5 lbs, cut into 1-inch cubes
Lemon
1, juiced
Olive oil
1/4 cup
Garlic
3 cloves, minced
Dried oregano
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/2 teaspoon
Cherry tomatoes
1 cup
Red onion
1, cut into 1-inch pieces
Yellow bell pepper
1, cut into 1-inch pieces
Red bell pepper
1, cut into 1-inch pieces
Skewers
8, soaked in water for 30 minutes if wooden

Instructions

  1. In a large bowl, whisk together the lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper to create a flavorful marinade.
  2. Add the swordfish cubes to the marinade, ensuring that all pieces are evenly coated. Allow the swordfish to marinate for at least 15 minutes, or up to 2 hours for a deeper flavor infusion.
  3. While the swordfish is marinating, prepare the grill by preheating it to medium-high heat.
  4. Thread the marinated swordfish cubes, bell peppers, red onion, and cherry tomatoes onto the soaked skewers, alternating between each ingredient.
  5. Carefully place the kebabs on the preheated grill. Grill for about 4-5 minutes per side, until the swordfish is fully cooked and the vegetables are tender and slightly charred.
  6. Remove the kebabs from the grill and allow them to rest for a few minutes before serving to let the juices redistribute.
  7. Serve these Mediterranean Swordfish Kebabs hot, alongside a fresh Greek salad or a side of couscous for a complete, authentic Mediterranean meal.

Tips

  • 💡 For an added flavor boost, reserve some of the marinade before adding the swordfish. You can use this as a basting sauce while grilling. Also, remember to rotate the kebabs regularly to ensure even cooking.
