Servings: 4
Ingredients
- Swordfish steaks
- 1.5 lbs, cut into 1-inch cubes
- Lemon
- 1, juiced
- Olive oil
- 1/4 cup
- Garlic
- 3 cloves, minced
- Dried oregano
- 1 teaspoon
- Salt
- 1/2 teaspoon
- Black pepper
- 1/2 teaspoon
- Cherry tomatoes
- 1 cup
- Red onion
- 1, cut into 1-inch pieces
- Yellow bell pepper
- 1, cut into 1-inch pieces
- Red bell pepper
- 1, cut into 1-inch pieces
- Skewers
- 8, soaked in water for 30 minutes if wooden
Instructions
- In a large bowl, whisk together the lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper to create a flavorful marinade.
- Add the swordfish cubes to the marinade, ensuring that all pieces are evenly coated. Allow the swordfish to marinate for at least 15 minutes, or up to 2 hours for a deeper flavor infusion.
- While the swordfish is marinating, prepare the grill by preheating it to medium-high heat.
- Thread the marinated swordfish cubes, bell peppers, red onion, and cherry tomatoes onto the soaked skewers, alternating between each ingredient.
- Carefully place the kebabs on the preheated grill. Grill for about 4-5 minutes per side, until the swordfish is fully cooked and the vegetables are tender and slightly charred.
- Remove the kebabs from the grill and allow them to rest for a few minutes before serving to let the juices redistribute.
- Serve these Mediterranean Swordfish Kebabs hot, alongside a fresh Greek salad or a side of couscous for a complete, authentic Mediterranean meal.
