Instructions
- Place the bulgur wheat in a large bowl and cover it with boiling water. Let it sit for 15 minutes until the bulgur absorbs the water and becomes tender. Drain well and set aside.
- In a separate large mixing bowl, combine the finely chopped parsley, mint, diced tomatoes, diced cucumbers, and sliced green onions.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper until well combined.
- Add the drained bulgur wheat to the herb and vegetable mixture, then pour the dressing over the top.
- Toss everything together gently but thoroughly, ensuring all ingredients are well coated with the dressing.
- Cover the salad with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
- Serve chilled as a refreshing side dish or as part of a mezze platter.
Tips
- For a gluten-free version, substitute bulgur wheat with quinoa or cauliflower rice.
- Feel free to adjust the herbs according to your taste; some people enjoy adding a bit of dill or adjusting the proportions of parsley and mint.
- Tabbouleh can be made a day in advance; just keep it covered in the refrigerator until ready to serve.
