Ingredients

Bulgur wheat
1 cup
Boiling water
1 cup (for soaking bulgur)
Fresh parsley
1 cup, finely chopped
Fresh mint
1/2 cup, finely chopped
Tomatoes
2 medium, diced
Cucumber
1 medium, diced
Red onion
1 small, finely chopped
Lemon juice
1/4 cup, freshly squeezed
Olive oil
1/4 cup
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon

Instructions

  1. Place the bulgur wheat in a bowl and cover it with boiling water. Let it sit for 15 minutes until the bulgur is tender, then drain any excess water and fluff with a fork.
  2. In a large mixing bowl, combine the diced tomatoes, cucumber, red onion, parsley, and mint.
  3. Add the cooked bulgur wheat to the bowl and gently fold to mix all the ingredients together.
  4. In a separate small bowl, whisk together the fresh lemon juice, olive oil, salt, and black pepper to create the dressing.
