- Boiling water
- 1 cup (for soaking bulgur)

- Cucumber
- 1 medium, diced
- Red onion
- 1 small, finely chopped
- Lemon juice
- 1/4 cup, freshly squeezed
- Olive oil
- 1/4 cup
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
Instructions
- Place the bulgur wheat in a bowl and cover it with boiling water. Let it sit for 15 minutes until the bulgur is tender, then drain any excess water and fluff with a fork.
- In a large mixing bowl, combine the diced tomatoes, cucumber, red onion, parsley, and mint.
- Add the cooked bulgur wheat to the bowl and gently fold to mix all the ingredients together.
- In a separate small bowl, whisk together the fresh lemon juice, olive oil, salt, and black pepper to create the dressing.
