Ingredients

Chicken breast
1 lb, boneless and skinless
Taco seasoning
2 tablespoons
Olive oil
2 tablespoons
Corn tortillas
8 small
Lettuce
1 cup, shredded
Tomato
1 cup, diced
Onion
1/2 cup, diced
Cilantro
1/4 cup, chopped
Lime
1, cut into wedges
Salsa
1 cup

Instructions

  1. Start by seasoning the chicken breast evenly with taco seasoning, ensuring every inch is coated.
  2. In a large skillet, heat olive oil over medium heat until shimmering.
  3. Add the seasoned chicken breast to the skillet and cook for 6-8 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  4. Once cooked, remove the chicken from the skillet and let it rest for about 5 minutes to retain its juices.
  5. Slice the rested chicken into thin strips, making it easy to fill the tortillas.
  6. In a dry skillet or microwave, warm the corn tortillas until they are flexible and warm, about 30 seconds on each side in the skillet or 20 seconds in the microwave.
  7. Assemble each taco by placing a portion of sliced chicken on a warm tortilla.
  8. Top with shredded lettuce, diced tomato, onion, chopped cilantro, and a generous spoonful of salsa.
  9. Finish by squeezing fresh lime juice over the top for an extra burst of flavor.
