- Chicken breast
- 1 lb, boneless and skinless
- Taco seasoning
- 2 tablespoons
- Olive oil
- 2 tablespoons
- Corn tortillas
- 8 small
- Lettuce
- 1 cup, shredded
- Tomato
- 1 cup, diced
- Onion
- 1/2 cup, diced
- Cilantro
- 1/4 cup, chopped
- Lime
- 1, cut into wedges
- Salsa
- 1 cup
Instructions
- Start by seasoning the chicken breast evenly with taco seasoning, ensuring every inch is coated.
- In a large skillet, heat olive oil over medium heat until shimmering.
- Add the seasoned chicken breast to the skillet and cook for 6-8 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Once cooked, remove the chicken from the skillet and let it rest for about 5 minutes to retain its juices.
- Slice the rested chicken into thin strips, making it easy to fill the tortillas.
- In a dry skillet or microwave, warm the corn tortillas until they are flexible and warm, about 30 seconds on each side in the skillet or 20 seconds in the microwave.
- Assemble each taco by placing a portion of sliced chicken on a warm tortilla.
- Top with shredded lettuce, diced tomato, onion, chopped cilantro, and a generous spoonful of salsa.
