Tacos de Suadero

- 1 pound, sliced thin Suadero beef
- 8 small (corn or flour) Tortillas
- 1 medium, finely chopped Onion
- 1/2 cup, chopped Cilantro
- 2, cut into wedges Lime
- 1 cup (your choice of red or green salsa) Salsa

Instructions
- Preheat a flat griddle or large skillet over medium-high heat.
- Add vegetable oil and heat until shimmering.
- Season the suadero beef slices with salt and pepper, then place them on the griddle.
- Cook the beef for about 3-5 minutes on each side, or until nicely browned and cooked through.
- While the beef is cooking, warm the tortillas on another part of the griddle or in a separate pan until soft and pliable.
- Once the beef is cooked, remove it from the heat and let it rest for a few minutes before slicing it into bite-sized pieces.
- To assemble the tacos, place a portion of the suadero beef on each tortilla, and top with chopped onions, cilantro, and a squeeze of lime juice.
- Add your favorite salsa on top and enjoy!
