These tacos are typically served with fresh onions, cilantro, zesty lime, and a spicy salsa, all wrapped in a warm tortilla. The cut of beef used, known as suadero, is prized for its rich flavor and tenderness, making these tacos a favorite among taco lovers.

Ingredients

Suadero beef
1 pound, sliced thin
Tortillas
8 small (corn or flour)
Onion
1 medium, finely chopped
Cilantro
1/2 cup, chopped
Lime
2, cut into wedges
Salsa
1 cup (your choice of red or green salsa)
Salt
to taste
Pepper
to taste
Vegetable oil
2 tablespoons (for cooking)

Instructions

  1. Preheat a flat griddle or large skillet over medium-high heat.
  2. Add vegetable oil and heat until shimmering.
  3. Season the suadero beef slices with salt and pepper, then place them on the griddle.
  4. Cook the beef for about 3-5 minutes on each side, or until nicely browned and cooked through.
  5. While the beef is cooking, warm the tortillas on another part of the griddle or in a separate pan until soft and pliable.
  6. Once the beef is cooked, remove it from the heat and let it rest for a few minutes before slicing it into bite-sized pieces.
  7. To assemble the tacos, place a portion of the suadero beef on each tortilla, and top with chopped onions, cilantro, and a squeeze of lime juice.
  8. Add your favorite salsa on top and enjoy!
