- Lemon zest
- from 2 lemons
- Lemon juice
- 1/4 cup, freshly squeezed
- Heavy cream
- 1 cup
- Grated Parmesan cheese
- 1 cup, plus extra for serving
Instructions
- Bring a large pot of salted water to a boil. Add the tagliolini pasta and cook according to package instructions until al dente, usually about 3-4 minutes.
- While the pasta is cooking, melt the unsalted butter in a large pan over medium heat. Once melted, add the lemon zest and juice, stirring to combine and release the aromatic oils.
- Pour in the heavy cream, stirring continuously. Bring the mixture to a gentle simmer, allowing it to thicken slightly, about 3-4 minutes.
- Once the pasta is cooked, reserve 1 cup of the pasta water and drain the rest. Add the drained tagliolini to the pan with the lemon cream sauce, tossing gently to coat the pasta evenly.
- Gradually add the grated Parmesan cheese, tossing the pasta to combine. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.
- Season with salt and freshly ground black pepper to taste. Serve hot, garnished with extra Parmesan cheese and a sprinkle of lemon zest for an extra pop of flavor.
