- Coarse sea salt

- Fresh shrimp, small
- 1 part, thoroughly cleaned
Instructions
- Under running water, thoroughly rinse the fresh small shrimp. Ensure all dirt and grit are removed.
- In a clean bowl, combine the cleaned shrimp with coarse sea salt in a 2:1 ratio. Mix well, ensuring all shrimp are coated with the salt.
- Transfer the salted shrimp into a clean, airtight glass jar. Seal the jar tightly.
- Allow the jar to sit at room temperature for fermentation, which should take approximately three days. Remember, the warmer your room temperature, the quicker the fermentation process.
- After three days, spread the fermented shrimp thinly on a clean, flat surface that's exposed to sunlight. Allow the shrimp to dry for about two days, or until they're completely dried.
- Once the shrimp have fully dried, they transform into your Tai O Shrimp Paste. Store your shrimp paste in a tightly sealed jar in the refrigerator. It's now ready to be used as an exquisite addition to your favorite dishes.
