Chicken thighs
1 pound, boneless and skinless
Soy sauce
3 tablespoons
Garlic
3 cloves, minced
Ginger
1 tablespoon, minced
White pepper
1 teaspoon
Sugar
1 teaspoon
Salt
to taste
Vegetable oil
for frying
Cornstarch
1/2 cup
Sweet potato starch
1/2 cup

Instructions

  1. In a bowl, marinate the chicken thighs with soy sauce, minced garlic, minced ginger, white pepper, and sugar for at least 30 minutes.
  2. In another bowl, combine the cornstarch and sweet potato starch, mixing well.
  3. Heat vegetable oil in a deep fryer or large saucepan to 350°F (175°C).
  4. Dredge the marinated chicken thighs in the starch mixture, ensuring an even coating and shaking off any excess.
  5. Carefully lower the chicken thighs into the hot oil and fry until golden brown and crispy, about 5-7 minutes, ensuring they are cooked through.
  6. Drain the fried chicken on paper towels and season with salt and white pepper to taste.
  7. Serve the Taiwanese Fried Chicken hot with the prepared dipping sauce.
