Ingredients

  • Daikon radish (1 medium, peeled and cut into thick slices)
  • Salt (1 tablespoon, for salting the radish)
  • Sugar (1/4 cup)
  • Rice vinegar (1 cup)
  • Water (1/2 cup)

Instructions

  1. Begin by peeling the daikon radish and cutting it into thick slices, about 1/2 inch in thickness.
  2. Sprinkle salt evenly over the daikon slices and let them sit in a colander for about 30 minutes. This process will draw out excess moisture, enhancing the crunchiness of the final pickles.
  3. After 30 minutes, rinse the daikon slices under cold running water to remove the salt, patting them dry with a clean towel.
  4. In a small saucepan, combine the sugar, rice vinegar, and water. Bring the mixture to a boil over medium heat, stirring continuously until the sugar has completely dissolved.
  5. Once the sugar is dissolved, remove the saucepan from heat and let the vinegar mixture cool to room temperature.
  6. In a clean, sterilized jar (or jars), layer the daikon slices and pour the cooled vinegar mixture over them, ensuring all the slices are submerged.
  7. Seal the jar tightly and refrigerate for at least 24 hours before serving to allow the flavors to meld.
  8. Takuan can be stored in the refrigerator for up to 2 weeks. Enjoy it with rice, sushi, or as a flavorful snack.
