Ingredients

Water
2 cups
Salt
1 teaspoon
Garam masala
1 tablespoon
Coriander powder
1 tablespoon
Red chili powder
1 teaspoon
Turmeric powder
1/2 teaspoon
Fresh ginger
2 inches, minced
Garlic
6 cloves, minced
Onions
2 large, finely sliced
Ghee
4 tablespoons
Mutton, bone-in preferred
2 pounds, cut into chunks

Instructions

  1. In a large heavy-bottomed pan, heat the ghee over medium heat until melted and hot.
  2. Add the sliced onions to the pan and sauté until they turn golden brown, stirring frequently to avoid burning, about 10-12 minutes.
  3. Stir in the minced garlic and ginger, cooking for an additional 2-3 minutes until fragrant.
  4. Add the mutton pieces to the pan, browning them on all sides, which should take about 5-7 minutes.
  5. Sprinkle in the turmeric, red chili powder, coriander powder, garam masala, and salt. Stir well to evenly coat the mutton with the spices.
  6. Pour in the water, bring the mixture to a boil, then reduce the heat to low. Cover the pan with a lid and let it simmer for about 45 minutes, or until the mutton is tender and the flavors meld together beautifully.
  7. Once cooked, adjust seasoning if necessary. Serve the Talawa Gosht hot, garnished with fresh cilantro if desired, alongside steamed rice or warm naan.
