Ingredients
- Water
- 2 cups
- Salt
- 1 teaspoon
- Garam masala
- 1 tablespoon
- Coriander powder
- 1 tablespoon
- Red chili powder
- 1 teaspoon
- Turmeric powder
- 1/2 teaspoon
- Fresh ginger
- 2 inches, minced
- Garlic
- 6 cloves, minced
- Onions
- 2 large, finely sliced
- Ghee
- 4 tablespoons
- Mutton, bone-in preferred
- 2 pounds, cut into chunks
Instructions
- In a large heavy-bottomed pan, heat the ghee over medium heat until melted and hot.
- Add the sliced onions to the pan and sauté until they turn golden brown, stirring frequently to avoid burning, about 10-12 minutes.
- Stir in the minced garlic and ginger, cooking for an additional 2-3 minutes until fragrant.
- Add the mutton pieces to the pan, browning them on all sides, which should take about 5-7 minutes.
- Sprinkle in the turmeric, red chili powder, coriander powder, garam masala, and salt. Stir well to evenly coat the mutton with the spices.
- Pour in the water, bring the mixture to a boil, then reduce the heat to low. Cover the pan with a lid and let it simmer for about 45 minutes, or until the mutton is tender and the flavors meld together beautifully.
- Once cooked, adjust seasoning if necessary. Serve the Talawa Gosht hot, garnished with fresh cilantro if desired, alongside steamed rice or warm naan.
