This Tandoori Asparagus recipe brings together the earthy flavors of asparagus with a tantalizing tandoori marinade, transforming this simple vegetable into a vibrant and zesty appetizer or side dish. Originating from the Indian subcontinent, the tandoori style of cooking involves marinating ingredients in a mixture of spices and yogurt, and then cooking them in a tandoor - a traditional clay oven. In this recipe, we've adapted the process for a conventional oven, so you can enjoy this delightful fusion of flavors right in your home kitchen!

Servings: 4

Ingredients

Asparagus
1 bunch
Greek yogurt
1 cup
Lemon juice
2 tablespoons
Garlic
2 cloves, minced
Ginger
1 inch piece, grated
Tandoori masala
1 tablespoon
Turmeric
1/2 teaspoon
Cumin
1/2 teaspoon
Coriander
1/2 teaspoon
Salt
1/2 teaspoon
Vegetable oil
1 tablespoon
Fresh cilantro
for garnish
Lemon wedges

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleaning.
  2. Trim the tough ends of the asparagus spears and set aside.
  3. In a bowl, combine Greek yogurt, lemon juice, minced garlic, grated ginger, tandoori masala, turmeric, cumin, coriander, salt, and vegetable oil to prepare the marinade.
  4. Add the asparagus spears to the marinade and gently toss until they are completely coated. Allow them to marinate for about 15-30 minutes for the flavors to infuse.
  5. Arrange the marinated asparagus spears on the prepared baking sheet in a single layer, making sure they are not overlapping.
  6. Bake in the preheated oven for 12-15 minutes, or until the asparagus is tender and slightly charred to bring out its natural sweetness.
  7. Garnish with fresh cilantro and serve hot with lemon wedges for an added zest. Enjoy this flavorful and nutritious Tandoori Asparagus as a delectable start to your meal or a healthy side dish!
