Tandoori Cauliflower Rice

Ingredients

Fresh cilantro
a handful, roughly chopped
Salt
1 teaspoon
Lemon juice
1 tablespoon
Garlic
2 cloves, minced
Ginger
1 tablespoon, grated
Coriander
1 teaspoon, ground
Cumin
1 teaspoon, ground
Turmeric
1/2 teaspoon, ground
Tandoori masala
2 tablespoons
Greek yogurt
1 cup
Cauliflower
1 large head, grated or processed into rice-like bits

Instructions

  1. In a large bowl, combine the cauliflower, Greek yogurt, tandoori masala, turmeric, cumin, coriander, ginger, garlic, lemon juice, and salt. Mix well until the cauliflower is evenly coated with the spiced yogurt mixture.
  2. Heat a large skillet over medium heat. Once hot, transfer the cauliflower mixture to the skillet.
  3. Cook for 10-12 minutes, stirring occasionally, until the cauliflower is tender and lightly browned, taking on the smoky, spiced flavors of the tandoori masala.
  4. Remove the skillet from heat and top the cauliflower rice with a generous sprinkle of fresh cilantro.
