Tandoori Cucumber is a vibrant and refreshing appetizer that tantalizes your taste buds with the perfect balance of cool, crisp cucumbers and bold, aromatic tandoori spices. This dish not only showcases the versatility of cucumbers but also pays homage to the rich culinary heritage of Indian cuisine, where spices play a pivotal role. Traditionally, Tandoori dishes are cooked in a clay oven, but here we embrace a fresh twist by marinating cucumbers to infuse them with the same bold flavors. Perfect for summer gatherings or as a zesty side dish, these marinated cucumbers are sure to impress your guests with their vibrant color and flavor, making every bite a delightful experience.

Servings: 4

Ingredients

Cucumbers
2 large, peeled and sliced into 1-inch thick rounds
Plain yogurt
1 cup
Tandoori masala
2 tablespoons
Lemon juice
2 tablespoons, freshly squeezed
Garlic
2 cloves, minced
Ginger
1 inch, grated
Salt
1 teaspoon
Fresh cilantro
1/4 cup, chopped for garnish

Instructions

  1. Start by peeling the cucumbers and cutting them into thick slices, about 1-inch thick.
  2. In a large mixing bowl, combine the plain yogurt, tandoori masala, freshly squeezed lemon juice, minced garlic, grated ginger, and salt. Mix well until all ingredients are evenly incorporated.
  3. Add the cucumber slices to the marinade and gently toss to ensure each piece is well-coated with the flavorful mixture.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour. This will allow the cucumbers to absorb the spices and flavors.
  5. Once marinated, remove from the refrigerator and give the cucumbers a gentle toss again.
  6. Garnish with freshly chopped cilantro just before serving for a burst of color and added freshness.
  7. Serve chilled as a delightful appetizer or a refreshing side dish to complement your favorite main courses.
