Original recipe serves 4-6

Fresh cilantro
1/4 cup, finely chopped
Salt
1/2 teaspoon
Fresh ginger
1 teaspoon, grated
Garlic
2 cloves, minced
Lemon juice
2 tablespoons
Tandoori masala
2 tablespoons
Greek yogurt
1 cup
Honeydew melon
1 large, cut into 1-inch cubes

Instructions

  1. In a large bowl, combine Greek yogurt, tandoori masala, lemon juice, minced garlic, grated ginger, and salt. Stir until well combined.
  2. Add the honeydew melon cubes to the marinade, ensuring each piece is coated evenly. Let it marinate for at least 30 minutes, or up to 2 hours for a stronger flavor.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated honeydew melon cubes onto skewers. If using wooden skewers, make sure to soak them in water for at least 30 minutes before use to prevent burning.
  5. Grill the skewers for about 5 minutes per side, or until the melon is slightly charred and caramelized. Be sure to turn them occasionally for even grilling.
  6. Remove from the grill and immediately garnish with chopped cilantro. Serve hot.
