Tandoori Lemon Glow

Invoke the vibrant flavors of India with Tandoori Lemon Glow, a tangy and exotic dish. Fresh lemons are marinated in a rich blend of aromatic spices and yogurt before being slow-roasted to perfection. The result? A beautiful charred exterior that gives way to tender, tangy flesh, making for an unforgettable appetizer or side dish.

Serves 4-6

Ingredients

Fresh cilantro leaves
1/4 cup, finely chopped for garnish
Lemon juice
1 tablespoon, freshly squeezed
Salt
1/2 teaspoon
Coriander powder
1 teaspoon
Cumin powder
1 teaspoon
Red chili powder
1 teaspoon
Turmeric powder
1/2 teaspoon
Ginger
1 teaspoon, freshly grated
Yogurt
1/2 cup, plain
Lemons
4, medium-sized

Instructions

  1. Slice the lemons into halves and squeeze out the juice, making sure to reserve the juice for the marinade.
  2. In a large bowl, combine the yogurt, freshly grated ginger, turmeric powder, red chili powder, cumin powder, coriander powder, salt, and the freshly squeezed lemon juice. This aromatic mixture will serve as your marinade.
  3. Add the lemon halves to the marinade, ensuring they are well coated. Let them soak up the flavors for at least 30 minutes.
  4. Preheat your oven to 400°F (200°C).
  5. Arrange the marinated lemon halves on a baking sheet, cut side up. Bake for 15-20 minutes, or until they are slightly charred and tender.
  6. Garnish the Tandoori Lemons with the finely chopped fresh cilantro and serve hot. They make a great appetizer or a tangy side dish to complement a main course.

Tips

  • 💡 Be sure to use fresh lemons for maximum flavor.
  • 💡 Adjust the spices based on your taste preferences.
  • 💡 Serve with a side of cucumber yogurt dip for an extra cooling effect.
