Fresh cilantro
1/4 cup, chopped (for garnish)
Vegetable oil
2 tablespoons
Salt

Ground coriander
1 teaspoon
Ground cumin
1 teaspoon
Ground turmeric
1/2 teaspoon
Tandoori masala
2 tablespoons
Fresh ginger
1 tablespoon, grated
Garlic
3 cloves, minced
Lemon juice
2 tablespoons
Greek yogurt
1 cup
Rutabaga
1 large, peeled and cut into wedges

Instructions

  1. In a large mixing bowl, combine the Greek yogurt, lemon juice, minced garlic, grated ginger, tandoori masala, turmeric, cumin, coriander, and salt. Mix well to create a smooth marinade.
  2. Add the rutabaga wedges to the marinade, tossing gently until they are fully coated. For best flavor, allow the rutabaga to marinate for at least 30 minutes, or up to overnight in the refrigerator.
  3. Preheat your oven to 400°F (200°C).
  4. Line a baking sheet with parchment paper and arrange the marinated rutabaga wedges in a single layer. Drizzle the vegetable oil over the top.
  5. Roast the rutabaga in the preheated oven for 35-40 minutes, turning halfway through, until they are tender and have developed a beautiful char and caramelization.
