Ingredients

Original recipe serves 4

Sardines
8, cleaned and gutted
Yogurt
1 cup
Lemon juice
2 tablespoons
Garlic
2 cloves, minced
Ginger
1 tablespoon, grated
Tandoori masala
2 teaspoons
Turmeric
1/2 teaspoon
Cayenne pepper
1/2 teaspoon
Salt
1/2 teaspoon
Vegetable oil
for brushing
Fresh cilantro
for garnish
Lemon wedges
for serving

Instructions

  1. In a large bowl, combine the yogurt, lemon juice, minced garlic, grated ginger, tandoori masala, turmeric, cayenne pepper, and salt. Stir until well blended to create the marinade.
  2. Add the sardines to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes. For a deeper flavor, consider refrigerating the sardines in the marinade overnight.
  3. Preheat your grill to medium-high heat.
  4. Brush the grill grates with vegetable oil. This prevents the sardines from sticking during the grilling process.
  5. Place the marinated sardines on the grill. Cook for approximately 3-4 minutes per side, or until the sardines are thoroughly cooked and slightly charred.
  6. Remove the sardines from the grill and garnish with fresh cilantro.
  7. Serve hot, accompanied by lemon wedges for an extra tangy kick.

Tips

  • 💡 Serving with a side of mint chutney adds a refreshing contrast to the smoky tandoori flavors.
  • 💡 For those who prefer a less spicy dish, the amount of cayenne pepper can be reduced.
