Original recipe serves 4

Country potatoes
1 kg, washed and cut into halves or quarters
Olive oil
2 tablespoons
Tandoori spice mix
1 tablespoon
Salt
1 teaspoon, or to taste
Fresh coriander
a handful, chopped for garnish

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine olive oil, tandoori spice mix, and salt. Stir until all the ingredients are well blended.
  3. Add the cut potatoes to the bowl. Toss until each potato piece is fully coated in the spice mix.
  4. Spread the potatoes out on the prepared baking tray, ensuring they are in a single layer for even roasting.
  5. Roast the potatoes in the preheated oven for 45 minutes, or until they're crispy and golden brown. Halfway through the roasting time, gently toss the potatoes to ensure they roast evenly.
  6. Once done, remove the tray from the oven. Let the potatoes cool slightly.
  7. Garnish the potatoes with fresh coriander before serving. Enjoy your Tandoori Spiced Country Potatoes as a side dish with your favorite main course.
