Fresh cilantro
1/4 cup, finely chopped, plus extra for garnish
Lemon juice
2 tablespoons
Salt
1/2 teaspoon
Paprika
1 teaspoon
Coriander
1 teaspoon, ground
Cumin
1 teaspoon, ground
Turmeric
1/2 teaspoon
Garlic
2 cloves, minced
Ginger
1 inch, freshly grated
Yogurt
1/2 cup, plain
Tomatoes
4 large

Instructions

  1. Preheat your grill to medium-high heat.
  2. Slice the tomatoes in half and carefully remove the seeds to prevent excess moisture while grilling.
  3. In a large bowl, combine the plain yogurt, freshly grated ginger, minced garlic, ground turmeric, ground cumin, ground coriander, paprika, salt, and lemon juice. Stir until well mixed.
  4. Add the chopped fresh cilantro to the yogurt mixture and stir to combine.
  5. Coat the tomato halves evenly with the spiced yogurt marinade, ensuring all sides are well covered. Let them sit for 15-20 minutes to absorb the flavors.
  6. Place the marinated tomatoes on the preheated grill, cut side down. Cook for about 5-7 minutes on each side, or until the tomatoes are slightly charred and tender.
  7. Remove the tomatoes from the grill and let them rest for a few minutes before serving.
