Tandoori Zucchini

Ingredients
- Fresh cilantro
- a handful, chopped for garnish
- Oil
- 2 tablespoons
- Salt
- 1 teaspoon or to taste
- Red chili powder
- 1 teaspoon
- Turmeric powder
- 1/2 teaspoon
- Ginger paste
- 1 tablespoon
- Garlic paste
- 1 tablespoon
- Tandoori masala
- 2 tablespoons
- Lemon juice
- juice of 1 lemon
- Yogurt
- 1/2 cup
- Zucchini
- 2 large, sliced
Instructions
- Start by preparing the marinade. In a large bowl, combine the yogurt, lemon juice, tandoori masala, garlic paste, ginger paste, turmeric powder, red chili powder, and salt. Mix well until all the ingredients are well incorporated.
- Add the sliced zucchini to the marinade. Toss until the zucchini slices are evenly coated. Leave to marinate for at least 30 minutes, or ideally overnight for more flavor absorption.
- When ready to cook, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up.
- Arrange the marinated zucchini slices on the prepared baking sheet. Drizzle them with oil to help them get a nice, roasted finish.
- Bake in the preheated oven for 15-20 minutes, or until the zucchini slices are tender and slightly charred.
- Garnish the cooked zucchini with the fresh chopped cilantro and serve hot. Enjoy this dish as a unique appetizer or a complementary side dish to your main course.
