Tantanmen

- 2 cups, chopped Bok choy
- 2 servings Ramen noodles
- 4 cups Chicken broth
- 2 tablespoons Chili bean paste
- 2 tablespoons Soy sauce
- 2 tablespoons Sesame oil
- 1 tablespoon, minced Fresh ginger
- 3 cloves, minced Garlic
- 8 ounces Ground pork

Instructions
- In a large pot, heat the sesame oil over medium heat until shimmering.
- Add the ground pork, garlic, and ginger to the pot. Cook for about 5-7 minutes, stirring frequently, until the pork is browned and cooked through.
- Stir in the soy sauce and chili bean paste, mixing well to combine all the flavors in the pan.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15 minutes to allow the flavors to meld.
- While the broth simmers, cook the ramen noodles according to package instructions. Drain the noodles and set aside.
- Add the chopped bok choy to the broth and cook for an additional 2-3 minutes, until the bok choy is wilted and tender.
- Divide the cooked ramen noodles evenly into serving bowls. Ladle the hot broth and bok choy over the noodles.
