Servings: 4

Ingredients

Tapioca flour
1 cup
Water
1 cup
Salt
1/4 teaspoon
Butter
2 tablespoons (for greasing the pan)
Fillings (your choice)
as desired

Instructions

  1. In a mixing bowl, combine the tapioca flour, water, and salt. Whisk until the mixture is smooth and free of lumps.
  2. Let the batter rest for about 10 minutes to allow the tapioca flour to absorb the water fully.
  3. Heat a non-stick frying pan or skillet over medium heat. Lightly grease it with butter using a paper towel or brush.
  4. Pour a ladleful of the batter into the center of the pan and quickly tilt the pan in a circular motion to spread the batter into a thin, even layer.
  5. Cook the crepe for 1-2 minutes, or until the edges begin to curl and the surface appears set.
  6. Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes, or until it is lightly golden.
  7. Remove the crepe from the pan and place it on a plate. Fill with your desired fillings, such as cheese, ham, chocolate, or fruit.
  8. Fold the crepe in half and serve immediately. Enjoy your delicious Brazilian tapioca crepes!
