Tartra - Romanian Cheese Pie

Similar to a quiche, this savory pie is a medley of fluffy eggs, crumbly feta cheese, and fresh dill, all nestled within a golden, buttery puff pastry. Ingredients
- Puff pastry
- 1 sheet, thawed if frozen
- Unsalted butter
- 2 tablespoons, for greasing
- Salt
- 1/2 teaspoon, or to taste
- Black pepper
- 1/4 teaspoon, freshly ground
- Fresh dill
- 1 tablespoon, finely chopped
- Sour cream
- 1/2 cup
- Feta cheese
- 1 cup, crumbled
- Eggs
- 4 large
Instructions
- Preheat the oven to 180°C (350°F). Grease a 9-inch pie dish with the unsalted butter.
- Unfold the puff pastry sheet. Roll it out on a lightly floured surface to fit the pie dish. Line the dish with the puff pastry, pressing it into the corners. Trim off any excess pastry hanging over the edges.
- In a medium mixing bowl, beat the eggs until smooth. Add in the crumbled feta cheese, sour cream, finely chopped dill, salt, and freshly ground black pepper. Mix all the ingredients well until combined.
- Pour the egg and cheese mixture into the pastry-lined pie dish, spreading it evenly with a spatula.
- Bake in the preheated oven for about 40 minutes, or until the top is golden brown and the filling is set when you gently shake the dish.
- Remove the pie from the oven and let it cool for at least 10 minutes before serving. This allows the filling to set up and makes it easier to slice.
Tips
- For a richer flavor, you can add a layer of sauteed onions or leeks to the bottom of the pie before adding the egg and cheese mixture.
- Feel free to experiment with other types of cheese, keeping in mind that the cheese should melt well and have a robust flavor to stand up to the eggs and cream.
