Ingredients

Tater tots
1 pound (frozen)
Breakfast sausage
1 pound, crumbled
Cheddar cheese
2 cups, shredded (divided)
Eggs
8 large
Milk
1 cup
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Green onions
1/4 cup, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  2. Spread the frozen tater tots out evenly in the bottom of the prepared baking dish.
  3. In a large skillet, cook the crumbled breakfast sausage over medium heat until browned and cooked through, about 5-7 minutes. Drain any excess fat and spread the sausage evenly over the layer of tater tots.
  4. In a large mixing bowl, whisk together the eggs, milk, half of the shredded cheddar cheese, salt, and black pepper until well combined.
  5. Pour the egg mixture evenly over the sausage and tater tots, ensuring everything is covered.
  6. Sprinkle the remaining cheddar cheese over the top of the casserole for a cheesy finish.
