Tater Tot Casserole

This Tater Tot Casserole is a nostalgic nod to mid-century American comfort food, while still being a hit on the modern family dinner table. Packed with juicy ground beef, a medley of vibrant mixed vegetables, a creamy umami-rich mushroom soup, all layered under a blanket of crispy golden tater tots and melted cheddar cheese, it's a heartwarming dish that's sure to satisfy.

Ingredients

Salt

Tater tots
1 bag (2 lbs)
Cheddar cheese
2 cups, shredded
Cream of mushroom soup
1 can (10.75 oz)
Mixed vegetables
1 bag (16 oz), frozen
Garlic
2 cloves, minced
Onion
1 medium, chopped
Ground beef
1 lb

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the ground beef, chopped onion, and minced garlic in a large skillet over medium heat until the beef is browned and cooked through. Be sure to break up the beef into small crumbles as it cooks.
  3. Drain the excess fat from the skillet.
  4. Add the mixed vegetables and cream of mushroom soup to the skillet. Stir until well combined.
  5. Stir in half of the shredded cheddar cheese. Season the mixture with salt and black pepper to taste.
  6. Transfer the beef and vegetable mixture to a 9x13-inch baking dish, spreading it out in an even layer.
  7. Arrange the tater tots on top of the mixture in the baking dish. Sprinkle the remaining shredded cheddar cheese over the tater tots.
  8. Bake the casserole in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and the cheese is melted and bubbly.
  9. Allow the casserole to cool for a few minutes before serving.
