Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, brown the ground beef until cooked through, breaking it apart with a spatula. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet, cooking until the onion becomes translucent, about 3-4 minutes.
- Stir in the mixed vegetables, cream of mushroom soup, milk, and half of the shredded cheddar cheese. Season with salt and black pepper to taste, ensuring everything is well combined.
- Pour the creamy beef and vegetable mixture into a greased 9x13 inch baking dish, spreading it evenly across the bottom.
- Arrange the tater tots in a single layer on top of the mixture, ensuring they cover the surface completely. Sprinkle the remaining cheddar cheese over the tater tots.
- Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving. Enjoy the deliciousness!
Tips
- For a spicier kick, add diced jalapeños or a sprinkle of cayenne pepper to the beef mixture.
- Feel free to swap the ground beef for ground turkey or chicken for a lighter version.
- This dish is also delicious with a layer of crispy fried onions on top before baking for added crunch!
