Serves 6

Ingredients

Ground beef
1 pound
Onion
1 medium, chopped
Garlic
2 cloves, minced
Mixed vegetables
2 cups (frozen or fresh, such as peas, carrots, and corn)
Cream of mushroom soup
1 can (10.5 ounces)
Milk
1/2 cup
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Cheddar cheese
2 cups, shredded (divided)
Tater tots
1 bag (32 ounces)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef until cooked through, breaking it apart with a spatula. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet, cooking until the onion becomes translucent, about 3-4 minutes.
  4. Stir in the mixed vegetables, cream of mushroom soup, milk, and half of the shredded cheddar cheese. Season with salt and black pepper to taste, ensuring everything is well combined.
  5. Pour the creamy beef and vegetable mixture into a greased 9x13 inch baking dish, spreading it evenly across the bottom.
  6. Arrange the tater tots in a single layer on top of the mixture, ensuring they cover the surface completely. Sprinkle the remaining cheddar cheese over the tater tots.
  7. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes before serving. Enjoy the deliciousness!

Tips

  • 💡 For a spicier kick, add diced jalapeños or a sprinkle of cayenne pepper to the beef mixture.
  • 💡 Feel free to swap the ground beef for ground turkey or chicken for a lighter version.
  • 💡 This dish is also delicious with a layer of crispy fried onions on top before baking for added crunch!
