Tembleque

Tembleque is a beloved traditional Puerto Rican coconut pudding that's creamy, sweet, and oh-so-delicious. This delightful dessert is a staple at Puerto Rican festivities and family gatherings, enchanting taste buds with its velvety texture and rich coconut flavor. The name 'tembleque' comes from the Spanish word for 'tremble,' reflecting the pudding's soft, wobbly consistency. Serve it chilled and garnish with a sprinkle of cinnamon or toasted coconut flakes for an irresistible treat that transports you to the warm shores of the Caribbean.

Serves 6

Ingredients

Coconut milk
2 cups
Cornstarch
1/2 cup
Granulated sugar
1/2 cup
Vanilla extract
1 teaspoon
Ground cinnamon
1/2 teaspoon
Ground nutmeg
1/4 teaspoon
Salt
1/4 teaspoon

Instructions

  1. In a medium saucepan, combine the coconut milk, cornstarch, sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt.
  2. Whisk the mixture vigorously until the cornstarch is completely dissolved and the ingredients are well combined.
  3. Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens and begins to gently boil.
  4. Once boiling, reduce the heat to low and continue cooking for an additional 2-3 minutes, stirring continuously to prevent sticking.
  5. Remove the saucepan from the heat and carefully pour the creamy mixture into individual serving dishes or a large mold for a beautiful presentation.
  6. Allow the tembleque to cool to room temperature, then transfer it to the refrigerator and chill for at least 2 hours, or until fully set.
  7. Before serving, garnish with a sprinkle of cinnamon or toasted coconut flakes for added texture and flavor.

Tips

  • 💡 For a tropical twist, consider adding a splash of pineapple juice to the mixture for a fruity flavor.
  • 💡 You can also serve tembleque with a drizzle of caramel sauce or a dollop of whipped cream for an extra indulgent treat.
