Instructions
- Begin by rinsing the dried anchovies under cold water. This is to ensure any impurities are removed.
- In a small bowl, combine the minced garlic, fish sauce, sugar, black pepper, and chili flakes. Mix the ingredients well until they form a consistent paste. This will serve as our flavor-packed sauce.
- Heat the vegetable oil in a pan over medium heat. Once the oil is hot, add the dried anchovies to the pan.
- Stir-fry the anchovies for 2-3 minutes or until they turn golden brown and crispy. Remember to stir continuously to prevent the anchovies from burning.
- Reduce the heat to low and carefully add the garlic mixture to the pan. Continue to stir-fry for another 2-3 minutes, making sure the anchovies are well coated with the sauce.
- Remove the pan from heat and let the Tep Kho Ta cool down before serving.
- Serve the Tep Kho Ta as a crunchy and flavorful appetizer. This dish is best consumed with a side of steamed rice and a refreshing cucumber salad.
