Chili flakes
1 teaspoon
Vegetable oil
2 tablespoons
Black pepper
1/2 teaspoon
Sugar
1 tablespoon
Fish sauce
2 tablespoons
Garlic
2 cloves, minced
Dried anchovies
1 cup

Instructions

  1. Begin by rinsing the dried anchovies under cold water. This is to ensure any impurities are removed.
  2. In a small bowl, combine the minced garlic, fish sauce, sugar, black pepper, and chili flakes. Mix the ingredients well until they form a consistent paste. This will serve as our flavor-packed sauce.
  3. Heat the vegetable oil in a pan over medium heat. Once the oil is hot, add the dried anchovies to the pan.
  4. Stir-fry the anchovies for 2-3 minutes or until they turn golden brown and crispy. Remember to stir continuously to prevent the anchovies from burning.
  5. Reduce the heat to low and carefully add the garlic mixture to the pan. Continue to stir-fry for another 2-3 minutes, making sure the anchovies are well coated with the sauce.
  6. Remove the pan from heat and let the Tep Kho Ta cool down before serving.
  7. Serve the Tep Kho Ta as a crunchy and flavorful appetizer. This dish is best consumed with a side of steamed rice and a refreshing cucumber salad.
