Servings: 4

Ingredients

Sesame seeds
1 tablespoon, toasted for garnish
Green onions
2, thinly sliced for garnish
Steamed vegetables
2 cups
Cooked rice
4 cups
Water
2 tablespoons, for sauce thickening
Cornstarch
1 tablespoon, for sauce thickening
Ginger
1 tablespoon, freshly grated
Garlic
2 cloves, minced
Brown sugar
1/4 cup
Mirin
1/2 cup
Soy sauce
1/2 cup
Chicken thighs
4, boneless and skinless

Instructions

  1. In a bowl, whisk together the soy sauce, mirin, brown sugar, minced garlic, and grated ginger to create a rich and flavorful Teriyaki sauce.
  2. Place the chicken thighs in a dish and pour half the Teriyaki sauce over them, ensuring they are well-coated. Allow them to marinate for at least 30 minutes, or for best results, overnight in the refrigerator.
  3. Preheat a grill or grill pan over medium-high heat. Cook the marinated chicken thighs for about 6-8 minutes per side, until they are beautifully caramelized and cooked through.
  4. While the chicken is grilling, make a slurry by combining the cornstarch with the water in a small bowl. Stir until smooth.
  5. In a saucepan, combine the remaining Teriyaki sauce with the cornstarch slurry. Cook over medium heat, stirring continuously until the sauce thickens into a glossy glaze.
  6. Once the chicken is fully cooked, remove it from the grill and generously brush with the thickened Teriyaki glaze.
  7. To serve, plate up the Teriyaki Chicken with a scoop of steamed rice and a side of steamed vegetables. Sprinkle with toasted sesame seeds and sliced green onions for the final touch.
