Authentic Teriyaki Chicken

- Soy sauce
- 1/2 cup
- Chicken thighs
- 4, boneless and skinless
Instructions
- In a bowl, whisk together the soy sauce, mirin, brown sugar, minced garlic, and grated ginger to create a rich and flavorful Teriyaki sauce.
- Place the chicken thighs in a dish and pour half the Teriyaki sauce over them, ensuring they are well-coated. Allow them to marinate for at least 30 minutes, or for best results, overnight in the refrigerator.
- Preheat a grill or grill pan over medium-high heat. Cook the marinated chicken thighs for about 6-8 minutes per side, until they are beautifully caramelized and cooked through.
- While the chicken is grilling, make a slurry by combining the cornstarch with the water in a small bowl. Stir until smooth.
- In a saucepan, combine the remaining Teriyaki sauce with the cornstarch slurry. Cook over medium heat, stirring continuously until the sauce thickens into a glossy glaze.
- Once the chicken is fully cooked, remove it from the grill and generously brush with the thickened Teriyaki glaze.
