Ingredients
- Olive oil

- Onions
- 4 large, thinly sliced
- Raisins
- 1 cup
- Honey
- 1/4 cup
- Water
- 1 1/2 cups
- Cinnamon sticks

- 1 teaspoon
- Ground turmeric
- 1 teaspoon
- Ground cumin
- 1 teaspoon
- Ground coriander
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Salt
- 1 teaspoon
- Cinnamon
- 1 teaspoon
- Cilantro
- 1/4 cup, chopped (for garnish)
- Almonds
- 1/2 cup, sliced
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and sauté, stirring occasionally, until the onions are golden brown and caramelized, about 30 minutes.
- Once the onions are beautifully caramelized, add the raisins, cinnamon, ginger, turmeric, cumin, coriander, salt, and black pepper. Stir well to ensure the spices are evenly distributed among the onions.
- Pour in the water and honey, then add the cinnamon sticks. Bring the mixture to a gentle simmer.
- Cover the pot and let it simmer gently for about 30 minutes, stirring occasionally. The flavors will meld beautifully, and the mixture will thicken slightly.
- While the tfaya simmers, toast the sliced almonds in a dry pan over medium heat until golden brown, about 3-5 minutes. Keep a close eye on them to prevent burning.
- To serve, spoon the tfaya generously over a bed of fluffy couscous or rice. Garnish with the toasted almonds and chopped cilantro for a fresh finish.
