Instructions
- In a medium bowl, combine the soy sauce, fish sauce, lime juice, honey, minced garlic, and grated ginger to create the marinade.
- Add the diced chicken to the marinade, ensuring all pieces are well-coated. Let it sit for 10 minutes to absorb the flavors.
- Heat a skillet over medium-high heat. Add the marinated chicken, reserving any leftover marinade. Cook until the chicken is fully cooked, about 5-7 minutes.
- Add the diced red bell pepper, julienned carrots, and chopped green onions to the skillet, stirring to combine. Cook for an additional 2-3 minutes, until the vegetables are slightly softened.
- Pour the reserved marinade over the chicken and vegetables, stirring to coat evenly. Remove the skillet from heat and let the mixture cool slightly.
- To assemble the wraps, spoon the chicken and vegetable mixture onto each lettuce leaf. Top with crushed peanuts and chopped cilantro.
- Roll up the lettuce leaves, securing with a toothpick if necessary, and enjoy your Thai Chicken Lettuce Wraps!
Tips
- For a vegetarian version, substitute tofu for the chicken.
- Add more heat with a sprinkle of crushed red pepper flakes or a drizzle of Sriracha.
