
Thai Chicken Lettuce Wraps
These Thai-inspired chicken lettuce wraps are packed with flavor and make for a delicious and healthy meal.
Ingredients
- Cilantro (1/4 cup, chopped)
- Peanuts (1/4 cup, chopped)
- Lettuce leaves (8)
- Green onions (4, chopped)
- Carrots (2, julienned)
- Red bell pepper (1, diced)
- Ginger (1 tablespoon, grated)
- Garlic (3 cloves, minced)
- Honey (1 tablespoon)
- Lime juice (2 tablespoons)
- Fish sauce (1 tablespoon)
- Soy sauce (2 tablespoons)
- Chicken breast (2, boneless and skinless, diced)
Instructions
- In a bowl, combine the soy sauce, fish sauce, lime juice, honey, garlic, and grated ginger.
- Add the diced chicken to the marinade and let it sit for 10 minutes.
- Heat a skillet over medium-high heat and add the marinated chicken. Cook until the chicken is cooked through, about 5-7 minutes.
- Add the diced red bell pepper, julienned carrots, and chopped green onions to the skillet. Cook for an additional 2-3 minutes.
- Remove the skillet from heat and let the mixture cool slightly.
- To serve, spoon the chicken mixture onto lettuce leaves.
- Top with chopped peanuts and cilantro.
- Roll up the lettuce leaves and enjoy!
