Ingredients

Original recipe serves 4

English cucumbers
2, thinly sliced
Red onion
1 small, thinly sliced
Fresh cilantro
1/2 cup, chopped
Roasted peanuts
1/3 cup, crushed
Lime juice
1/4 cup
Fish sauce
2 tablespoons
Sugar
1 tablespoon
Red chili pepper
1, finely chopped
Salt
to taste

Instructions

  1. In a large bowl, add the thinly sliced cucumbers, red onion, and the freshly chopped cilantro.
  2. In a separate smaller bowl, prepare the dressing by whisking together the lime juice, fish sauce, sugar, and finely chopped red chili pepper. Ensure the sugar is fully dissolved.
  3. Carefully pour the dressing over the cucumber mixture and gently toss to ensure every piece is coated evenly with the dressing.
  4. Season the salad with salt to your preference. Remember to taste as you go, as the fish sauce contributes to the saltiness.
  5. Finish the salad by garnishing with crushed roasted peanuts for that delightful crunch.
  6. Allow the salad to chill in the fridge for at least 30 minutes before serving to allow the flavors to meld together. Serve chilled and enjoy the refreshing taste of Thailand!

Tips

  • 💡 For a vegetarian version, replace fish sauce with soy sauce or tamari.
  • 💡 Add some grilled shrimp or chicken for a protein-rich meal.
  • 💡 For a milder salad, remove the seeds from the chili pepper.
