Ingredients
- Roasted Peanuts
- 1/4 cup, roughly chopped
- Fresh Cilantro
- 1/4 cup, finely chopped
- Eggs

- Lime Juice

- Fish Sauce
- 1 tablespoon
- Soy Sauce
- 2 tablespoons
- Thai Red Curry Paste
- 2 tablespoons
- Frozen Peas
- 1/2 cup
- Bell Pepper
- 1, diced
- Carrot
- 1, diced
- Onion
- 1, diced
- Garlic
- 2 cloves, minced
- Vegetable Oil
- 2 tablespoons
- Cooked Rice
- 3 cups, chilled
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic and diced onion to the skillet. Sauté until the onion becomes translucent, which should take about 5 minutes.
- Next, add the diced carrot, bell pepper, and frozen peas. Stir-fry these for about 2-3 minutes, until the vegetables start to become tender.
- Push the vegetables to one side of the skillet. Pour the beaten eggs onto the other side and scramble them until they're fully cooked.
- Add the chilled cooked rice to the skillet. Use a spatula to break it up and ensure it's evenly distributed among the vegetables.
- Now, add the Thai red curry paste, soy sauce, fish sauce, and lime juice. Stir everything together well, ensuring that the rice and vegetables are thoroughly coated with the sauce.
- Continue stir-frying for another 2-3 minutes, until everything is well combined and heated through.
