Thai Curry Fried Rice

This Thai-inspired fried rice is packed with aromatic flavors and colorful vegetables.

Ingredients

  • Roasted peanuts (1/4 cup, chopped)
  • Fresh cilantro (1/4 cup, chopped)
  • Eggs (2, beaten)
  • Lime juice (1 tablespoon)
  • Fish sauce (1 tablespoon)
  • Soy sauce (2 tablespoons)
  • Thai red curry paste (2 tablespoons)
  • Frozen peas (1/2 cup)
  • Bell pepper (1, diced)
  • Carrot (1, diced)
  • Onion (1, diced)
  • Garlic (3 cloves, minced)
  • Vegetable oil (2 tablespoons)
  • Cooked rice (4 cups, chilled)

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add minced garlic and diced onion. Cook until the onion is translucent.
  3. Add diced carrot, bell pepper, and frozen peas. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
  4. Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
  5. Add chilled cooked rice to the skillet and break it up with a spatula. Stir-fry for 2-3 minutes to heat the rice.
  6. Add Thai red curry paste, soy sauce, fish sauce, and lime juice. Stir well to coat the rice and vegetables with the sauce.
  7. Continue stir-frying for another 2-3 minutes until everything is well combined and heated through.
  8. Remove from heat and garnish with fresh cilantro and chopped roasted peanuts.
  9. Serve hot and enjoy!
