Ingredients

Roasted Peanuts
1/4 cup, roughly chopped
Fresh Cilantro
1/4 cup, finely chopped
Eggs
2, beaten
Lime Juice
1 tablespoon
Fish Sauce
1 tablespoon
Soy Sauce
2 tablespoons
Thai Red Curry Paste
2 tablespoons
Frozen Peas
1/2 cup
Bell Pepper
1, diced
Carrot
1, diced
Onion
1, diced
Garlic
2 cloves, minced
Vegetable Oil
2 tablespoons
Cooked Rice
3 cups, chilled

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and diced onion to the skillet. Sauté until the onion becomes translucent, which should take about 5 minutes.
  3. Next, add the diced carrot, bell pepper, and frozen peas. Stir-fry these for about 2-3 minutes, until the vegetables start to become tender.
  4. Push the vegetables to one side of the skillet. Pour the beaten eggs onto the other side and scramble them until they're fully cooked.
  5. Add the chilled cooked rice to the skillet. Use a spatula to break it up and ensure it's evenly distributed among the vegetables.
  6. Now, add the Thai red curry paste, soy sauce, fish sauce, and lime juice. Stir everything together well, ensuring that the rice and vegetables are thoroughly coated with the sauce.
  7. Continue stir-frying for another 2-3 minutes, until everything is well combined and heated through.
