Authentic Thai Green Curry Sauce

Ingredients
- Fresh cilantro leaves (1/2 cup)
- Fresh basil leaves (1/2 cup)
- Lime juice (2 tablespoons)
- Sugar (1 tablespoon)
- Fish sauce (2 tablespoons)
- Green beans (1 cup, trimmed and halved)
- Broccoli florets (1 cup)
- Carrot (1 large, sliced into thin rounds)
- Bell pepper (1 medium, sliced into thin strips)
- Onion (1 medium, finely chopped)
- Ginger (1 tablespoon, grated)
- Garlic (2 cloves, minced)
- Vegetable oil (2 tablespoons)
- Coconut milk (1 (14-ounce) can)
- Green curry paste (2 tablespoons)
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the minced garlic, grated ginger, and finely chopped onion. Sauté until the mixture becomes fragrant and the onion turns translucent, usually takes about 3-4 minutes.
- Stir in the green curry paste, and cook it for another 1-2 minutes. Keep stirring to prevent the paste from burning.
- Slowly pour the coconut milk into the pan, stirring continuously to combine it with the curry paste. This should create a smooth, creamy sauce.
- Add the sliced bell pepper, carrot rounds, broccoli florets, and halved green beans to the pan. Cook for about 5 minutes, or until the vegetables are tender-crisp.
- Stir in the fish sauce, sugar, and lime juice. Let it cook for an additional 2 minutes to allow the flavors to meld together.
- Remove the pan from heat, and stir in the fresh basil and cilantro leaves.
- Serve your Authentic Thai Green Curry Sauce over steamed jasmine rice or rice noodles for a traditional Thai meal. You can garnish with additional fresh basil and cilantro, if desired.
