Servings: 4

Ingredients

Fresh cilantro leaves
1/2 cup
Fresh basil leaves
1/2 cup
Lime juice
2 tablespoons
Sugar
1 tablespoon
Fish sauce
2 tablespoons
Green beans
1 cup, trimmed and halved
Broccoli florets
1 cup
Carrot
1 large, sliced into thin rounds
Bell pepper
1 medium, sliced into thin strips
Onion
1 medium, finely chopped
Ginger
1 tablespoon, grated
Garlic
2 cloves, minced
Vegetable oil
2 tablespoons
Coconut milk
1 (14-ounce) can
Green curry paste
2 tablespoons

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the minced garlic, grated ginger, and finely chopped onion. Sauté until the mixture becomes fragrant and the onion turns translucent, usually takes about 3-4 minutes.
  3. Stir in the green curry paste, and cook it for another 1-2 minutes. Keep stirring to prevent the paste from burning.
  4. Slowly pour the coconut milk into the pan, stirring continuously to combine it with the curry paste. This should create a smooth, creamy sauce.
  5. Add the sliced bell pepper, carrot rounds, broccoli florets, and halved green beans to the pan. Cook for about 5 minutes, or until the vegetables are tender-crisp.
  6. Stir in the fish sauce, sugar, and lime juice. Let it cook for an additional 2 minutes to allow the flavors to meld together.
  7. Remove the pan from heat, and stir in the fresh basil and cilantro leaves.
  8. Serve your Authentic Thai Green Curry Sauce over steamed jasmine rice or rice noodles for a traditional Thai meal. You can garnish with additional fresh basil and cilantro, if desired.
