Ingredients

Garlic
2 cloves, minced
Thai chili peppers
2-3, seeds removed and finely chopped
Sugar
1 tablespoon
Fish sauce
2 tablespoons
Lime juice
3 tablespoons
Roasted peanuts
1/4 cup, crushed
Fresh mint
1/4 cup, roughly chopped
Fresh cilantro
1/4 cup, roughly chopped
Green beans
1/2 cup, trimmed and cut into 1-inch pieces
Cherry tomatoes
1/2 cup, halved
Carrots
1/2 cup, julienned
Green papaya
2 cups, peeled and shredded

Instructions

  1. In a large bowl, combine the shredded green papaya, julienned carrots, halved cherry tomatoes, cut green beans, roughly chopped cilantro, and mint.
  2. To prepare the dressing, in a small bowl, whisk together the minced garlic, finely chopped Thai chili peppers, sugar, fish sauce, and lime juice until the sugar is completely dissolved.
  3. Pour the dressing over the salad and toss well to ensure all ingredients are thoroughly coated with the dressing.
  4. Garnish with crushed roasted peanuts just before serving to maintain their crunchiness.
  5. Serve immediately to enjoy the salad at its freshest. Paired with grilled shrimp or chicken satay, it makes for a delightful, light meal.
