Wooden skewers
10-12, soaked in water for 30 minutes
Lime
juice of 1 lime
Red pepper flakes
1/2 teaspoon
Fresh ginger
1 tablespoon, grated
Garlic
3 cloves, minced
Honey
2 tablespoons
Peanut butter
1/2 cup
Soy sauce
1/4 cup
Chicken breasts
2, cut into 1-inch pieces

Instructions

  1. In a bowl, whisk together the soy sauce, peanut butter, honey, minced garlic, grated ginger, red pepper flakes, and lime juice until the mixture is smooth and well combined. This is your flavorful Thai peanut marinade.
  2. Add the chicken pieces to the bowl and toss thoroughly to ensure each piece is well coated with the marinade. Cover the bowl and allow the chicken to marinate in the refrigerator for at least 1 hour. For a deeper flavor, you can marinate the chicken for up to 24 hours.
