Pasta

2 tablespoons
Garlic
2 cloves, minced
Milk
1 cup
Cheddar cheese
1 cup, shredded
Parmesan cheese
1/2 cup, grated
Mozzarella cheese
1 cup, shredded
Fresh parsley
2 tablespoons, chopped (for garnish)
Salt

Black pepper

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Pour in the milk, stirring continuously, and bring to a gentle simmer. Gradually whisk in the cheddar, parmesan, and mozzarella cheese until melted and the sauce is smooth and creamy. If the sauce is too thick, add a splash of reserved pasta water to achieve desired consistency.
  4. Season the cheese sauce with salt and pepper to taste. Remember, cheese can be salty, so adjust accordingly.
  5. Add the cooked pasta to the skillet, tossing gently to coat it thoroughly with the cheese sauce. Cook for an additional 2-3 minutes, allowing the pasta to absorb some of the sauce and heat through.
