Thyme and Garlic Roasted Lamb

Ingredients
- Black pepper

- Leg of lamb
- 1 (5 to 6 pounds)
Instructions
- Preheat the oven to 325°F (165°C).
- In a small bowl, combine the minced garlic, chopped thyme, olive oil, salt, and freshly ground black pepper. Stir until you have a well-blended paste.
- Pat the leg of lamb dry with paper towels. This helps the herb mixture adhere better to the meat.
- Evenly rub the garlic and thyme mixture all over the leg of lamb, ensuring it's well-coated.
- Place the lamb on a roasting rack set inside a roasting pan. This setup allows heat to circulate evenly around the lamb.
- Roast the lamb in the preheated oven for approximately 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the lamb reads 145°F (63°C) for medium-rare. For a well-done roast, aim for an internal temperature of 165°F (74°C).
- Once done, remove the lamb from the oven. Let it rest for 10 minutes to allow the juices to redistribute throughout the roast before slicing. This ensures a moist and flavorful meat.
- Slice the lamb against the grain and serve with your favorite side dishes.
